Our TIAA rep will be on the Ellensburg campus March 3, 4, and 5 for in-person meetings.

Submit FSA & DCAP Claims
All 2025 FSA and DCAP expenses must be submitted for reimbursement by March 31, 2026.
Unused DCAP balances will be forfeited and unused FSA balances above $660 will be forfeited. To receive FSA carryover, you must be enrolled in the FSA for 2026 or have at least $120 left in your account.

Black Bean Soup Recipe
Ingredients
- 3 Tablespoons olive oil
- 1 yellow onion, chopped
- 1 green bell pepper, chopped
- 4 garlic cloves, chopped
- 1 Tablespoon cumin
- 2 teaspoons smoked paprika
- 2 teaspoons dried oregano
- salt and black pepper
- 4 (15.5-ounce) cans black beans, rinsed
- 7 cups vegetable stock
- 2 bay leaves
- 1 Tablespoon sherry vinegar or apple cider vinegar
- Sliced avocado, chopped red onion, chopped fresh cilantro, lime wedges, and tortilla chips for serving.
Instructions
- Heat oil in a large Dutch oven or pot over medium heat. Add onion and bell pepper. Season with salt and pepper. Cook, stirring occasionally, until tender, 8 to 10 minutes. Add garlic, cumin, paprika, and oregano. Cook, stirring, until fragrant, about 1 minute.
- Stir in beans, stock, and bay leaves. Bring to a boil, then reduce heat and simmer, stirring occasionally, until flavors have melded, 40 to 45 minutes. Discard bay leaves and stir in sherry vinegar.
- Transfer 2 1/2 cups beans and 1 cup liquid to a bowl and mash with a potato masher until smooth. Return to Dutch oven. Season with salt and pepper. Serve with avocado, onion, cilantro, lime wedges, and chips.

Peanut Butter S’mores Skillet Cookie Recipe
Ingredients
- 1 cup (2 sticks) butter, at room temperature
- 1 cup granulated sugar
- 3/4 cup light brown sugar, packed
- 2 eggs
- 1 Tablespoon vanilla
- 1 teaspoon salt
- 1 teaspoon baking soda
- 3-1/2 cups flour
- 2 cups semi-sweet chocolate chips
- 1 cup peanut butter
- 1/2 cup graham cracker crumbs
- 5 (1.55 oz size) Hershey Milk Chocolate Bars
- 1-1/2 cups mini marshmallows
- Ice cream for serving – optional!
Instructions
- Preheat oven to 350 degrees.
- Lightly grease cast iron skillet.
- In mixer, beat butter and sugars until light and fluffy.
- Mix in eggs and vanilla until combined.
- Mix in salt and baking soda.
- Gradually stir in flour, then chocolate chips.
- Press half of dough into bottom of skillet.
- Top with peanut butter, graham cracker crumbs, chocolate bars (broken into pieces) and marshmallows.
- Place remaining dough on top, flattening small pieces in your hand and setting them on. The pieces can touch, but don’t have to as the dough will spread as it bakes.
- Bake for 25 minutes or until the top is golden.
- Serve while still warm for the ultimate gooey treat!
