FR 201 Appreciation of French Cuisine


This is a summer course designed and taught by Dr. Michael Johnson

Dr. Michael A. Johnson, our French Professor and French Studies Program Coordinator, is also a professional Chef, whose creative and elevated cooking is well-known in our community. You can often find Dr. Johnson designing and executing complex menus for various charitable causes, bringing high cuisine to Ellensburg community. Dr. Johnson is also a Food Studies scholar, whose recent research explores history of plant-based cuisine in France.

FR 201 - Appreciation of French Cuisine is a course that focuses on many nuances of French gastronomy along with cultural and social context that defines our approach to food, cooking and eating. Dr. Johnson's teaching expertly fuses appreciation for French cuisine and historical examination of food in French culture. From simple iconic dishes to centuries-old recipes - the course, naturally, includes delicious tastings!
