The Food Science and Nutrition Program in the Department of Nutrition, Exercise, and Health Sciences, Human Performance, and Nutrition offers two degree programs: The Bachelor of Science in Food Science and Nutrition and the Bachelor of Applied Science in Food Service Management. Within the Bachelor of Science in Food Science and Nutrition are three specializations. The Foods and Nutrition Specialization provides a broad area of expertise and prepares students for a wide variety of careers in the food and nutrition industries. The Foods and Nutrition specialization also is designed to allow students to complete a minor in a field that relates to professional career advancement. The Dietetics Specialization (plus ANTH 130, ECON 101, and PSY 101), is accredited by the Academy of Nutrition and Dietetics (AND)/ Accreditation Council for Education in Nutrition and Dietetics (ACEND) as a Didactic Program in Dietetics (DPD) and prepares students to apply for an AND accredited supervised practice program (Dietetic Internships). After completing these two steps and passing the Registration Exam, students become Registered Dietitians. The Nutrition Science Specialization prepares students for graduate study in nutrition, research and development positions in the food and nutrition industry, as well as admission into health-related professional programs.
In addition, the Food Science and Nutrition program offers a Master of Science degree in Nutrition that offers small classes, opportunity to work closely with faculty, an excellent learning environment, and an opportunity to conduct research. Graduate students in nutrition have their Masters Thesis consistently presented at national conferences including those of the Academy of Nutrition and Dietetics and the American College of Sports Medicine.
Lastly, the Food Science and Nutrition program offers an AND/ACEND accredited Dietetic Internship. Completion of this Dietetic Internship satisfies the supervised practice requirements towards becoming a Registered Dietitian and qualifies the individual to take the Registration Examination to become and Registered Dietitian (Nutritionist) RD(N).
